Healthy Recipes for Summer

Breakthrough Fish Tacos

1 Ib. white fish such as sole, flounder, haddock or cod
1/4 c. canola oil
1/4 c. lime juice
1 jalapeño seeded and coarsely chopped
1 Tbsp chili powder
8 whole wheat tortillas
2 c. finely shredded cabbage
1 medium fresh tomato, chopped

Preheat grill to medium high heat. Place fish in a medium size dish. Whisk together the oil, lime juice, chili powder, jalapeño, and 1/4 c. cilantro and pour over the fish. Let marinate for 15 to 20 minutes. Remove the fish from the marinade and place onto a hot grill, flesh side down. Grill the fish for 4 minutes on the first side and then flip for 30 seconds and remove. Let rest for 5 minutes then flake the fish with a fork. Place the tortillas and garnish with cabbage, green onions, 1/2 c. cilantro, and tomatoes. Top with salsa.
